These Chorizo Tacos with Flame-Kissed Jalapeño Salsa Verde are inspired by the first Mexican street food I tasted in Cancun. Bursting with bold flavors, this recipe brings together the rich, spicy chorizo with the smoky roasted jalapeño salsa verde that adds an authentic touch. Fresh cilantro, diced onions, and a squeeze of lime bring back memories of those unforgettable first bites in the heart of Mexico. This dish is my homage to the vibrant flavors that sparked my culinary love for Mexican cuisine!

Ingredients

  • 5 Tomatillos Husked
    2-3 Large Jalapeños Fire-roasted
    1/2 White Onion Fire-roasted
    2 Garlic Cloves Fire-roasted
    1/4 cup Cilantro
    1 tbsp Lime Juice
    Salt To Taste
    1/4 cup Water Optional

  • Chorizo
  • 1 lb Chorizo Sausage Remove Casing
    2 tbsp Olive Oil Extra Virgin
    1/2 tsp Smoked Paprika Optional

  • Garnish
  • 1/2 Diced Onion
     Chopped Cilantro
     Corn Taco Shells

Directions

  • Roasted Jalapeño Salsa Verde
  • Roast: Broil tomatillos, jalapeños, onion, and garlic until charred (5-7 minutes). Peel the jalapeños and garlic.
    Blend: Blend the roasted veggies with cilantro, lime juice, salt, and water (if needed) blend it to chunky or smooth.
    Adjust: Taste, and adjust salt and lime to your liking.
    Make the salsa in advance and refrigerate it for 2-3 hrs for flavours to develop
  • Chorizo
  • Heat the Pan: Add 2 tbsp of olive oil to a hot pan over medium heat.
    Cook the Chorizo: Remove the casing from the chorizo and crumble the meat into the pan. Cook, stirring occasionally, until the chorizo is fully browned, crispy, and in small crumbles (about 8-10 minutes).
    Add Paprika: Once cooked, add a pinch of smoked paprika for extra depth of flavor, and mix well.
    Your crispy chorizo filling is now ready for tacos!
  • Tortilla
  • Warm the corn tortillas by heating them directly over a flame for a slight char or in a dry skillet until soft.
  • Assemble and Enjoy
  • Add a generous portion of the cooked chorizo sausage.
    Top with diced onion, cilantro, and a drizzle of roasted jalapeño salsa verde.
  • Garnish and Serve: Squeeze fresh lime juice over the tacos for brightness and garnish with extra cilantro.
